During my last residency in Dubai, Quinn had the opportunity to make pizza at the hotel restaurant & also bake with the wonderful Executive Pastry Chef Wolfgang. He spent 4 days for 8-10 hours a day in the kitchen hard at work making all the desserts for afternoon tea. Neil & I kept checking in with the chef asking if we should come & get him. Chef said, “He wants to work, let him work! He has great skills and my staff love him, so please let him stay.” Quinn came back to our room after his first 10 hour day, flopped down onto his bed utterly exhausted. His words: “Mom, for 6 years I didn’t know what I wanted to be when I grow up. Now I know! A chef!” He has always enjoyed helping me in the kitchen. He makes his own salsa & makes cooking shows with his cousins. I am so happy for him & this amazing time he had at the Hotel. I know this experience has changed his life spending time with people so passionate about what they do & allow an 8 year old to spend the day with them. I am one proud Mama & I am excited to see how this day will affect the rest of his life. We all have moments we remember from “when I was 8 years old.” Whether he ends up being a Chef or not, the important thing is that he had this impacting experience at such an impressionable age. We are so grateful for our Dubai family.
